As part of our Leaving Cert course, the 6th year Home Economics class had the chance to travel to our local catering company JM Foods to see HACCP live in action. HACCP stands for ‘hazard analysis critical control point’ and it is a system used by food businesses to ensure that they don’t put their customers at risk from either physical, chemical or microbial contamination as well as allergens which may cause harm to the consumer. The system helps the business to look for and prevent potential problems before they arise.

It was brilliant to see each of the seven steps in the HACCP system and how each one was carried out by the business. Each stage of food handling was analysed and the critical control points were determined in purchasing, storage, preparation, cooking and serving of food. We saw how critical control limits were set in place for example the fridge must always be kept under 4°C. Records are kept recording the efficiency of the system in place and the system is reviewed regularly to ensure that it is working effectively.

From studying the HACCP system in a classroom it is difficult to imagine how the stages are implemented in the food industry so it was an eye opener to see it working live in action!
